Apple Pancake - Gluten Free!!!

I love the original pancakes, but this version is my best! Simple, easy to make and delicious! I learn from our old neighborhood. I'm so sad, because she can't longer be with us. :( She made a lot of new meals to us. My other favorite is the Sour creamy cucumber salad, later I'll make a post fro that special salad. Maybe! :)
Now I made from brown rice flour, but you can use original flour of course. The other things, I don't put sugar, because the apple is sweet and I don't eat sugar and I serve with cinnamon-sugar. 
But now the recipe!

Ingredients to 5 medium-sized pancake:

1 medium-sized apple
2 eggs
1 pinch of salt
1 pinch of cinnamon
1 teaspoon vanilla extract
0,5 cup of brown rice flour

3 teaspoon sugar
0,2 teaspoon cinnamon


I peel and grate the apple. Add the eggs...
the cinnamon, the salt and the vanilla extract. Mix.
Pour the flour in little amounts and mix well.
Heat the pan. When it's hot add some butter and put the pancake batter.
I fry them when they're golden brown.
Mix the sugar with the cinnamon and eat the hot pancake with this mixture.
