Sweet & Sour Chicken with Steamed Rice - Gluten Free!!

Ingredients:

To the Chicken:

3 cup Chicken Breast cut in cube shape
1/3 cup Corn Starch
1/3 cup White Rice Flour
Salt and Black Pepper
2-3 tablespoon Coconut Oil to the fry

Sauce: 

1/4 cup Corn Starch
1/4 cup Brown Sugar
3 tablespoon ketchup
1 pinch of salt
1/2 tablespoon White Vinegar (the origin recipe use Rice Vinegar) 
2 cup water
Red food color

3/4 cup carrot (I made from baby carrot)
3/4 cup Green Bell Pepper
3/4 cup Onion 
1/2 cup Pineapple (I cut to small cubes)

Steamed rice for the serve.


I sprinkle the meat with salt and black pepper.
Add the corn starch and the rice flour.
Mix all together.
Fry the meat on coconut oil on the highest temperature fast.
Put the carrots into a pan wit some water and cook for about 15 minutes.
Add the green pepper...
...the onion...
...and the pineapple. Cook together until you mix the sauce.
Put the brown sugar and the corn starch into a bowl.
Add the water.
Pour the vinegar...
...and add the ketchup.
I put some food color too for the beauty red color.
Mix well together.
Pour into the veggies and boil to more 5-10 minutes when thick enough.
Preheat the meat.
Add the sauce to the meat and mix them well.
Serve with the steamed rice.

Tiramisu & Raspberry Cream Cheese Cupcakes

Ingredients for 12 cupcakes (6 Tiramisu & 6 Raspberry flavor ):

1 box Betty Crocker Super Moist White Cake Mix
1 1/4 cup water, 1/3 cup vegetable oil, 3 egg whites - these are for the cake mix
(When you haven't got cake mix, use original vanilla muffin recipe!)

Tiramisu: 

3 egg yolks
3 tablespoon white sugar
250 g Mascarpone Cheese
1 cup Heavy Whip Cream
1 teaspoon Vanilla Extract
6 tablespoon Water
1 teaspoon Instant Coffee
1/2 teaspoon Rum Extract
Cocoa Powder

Raspberry Cream Cheese:

Pink Food Color
1 box Philadelphia Cream Cheese
1/2 cup White Sugar
1 cup Heavy Whip Cream 
1 teaspoon Vanilla Extract
1 small box Fresh Raspberry

Tools:

Muffin pan
Muffin cups (I used Tulip)
Stand or Hand Mixer
Ice Cream Scooper
Spatula
Egg Beater
Cooling Rack


 The first step is mix the Cake Base as the box say.

Tiramisu Cupcake - leave the cake mix in the base color and fill 2/3 mixture into 6 tulip muffin cups.
Put the pan into the 350°F preheated oven and bake them for 25-30 minutes. Check with toothpick - when it's dry and clean your muffins are ready.
Mix the egg yolks with the white sugar when it's lightly and fluffy. Add the Mascarpone cheese and mix well. Beat the Cream with 1 teaspoon of Vanilla Extract when it's turn to hard add the Mascarpone cream and mix together. Put into the fridge until use. Boil the 6 tablespoon water, add the rum extract and the instant coffee powder. Pour the coffee mixture into the muffins. Put the Mascarpone mixture in a star tip end whipped cream bag and create the top of the cupcakes. Finally sprinkle the top with cocoa powder.

Raspberry Cupcakes - the other half of the cake mix I added some Pink food color and mix gently. Put into 6 tulip muffin form and bake in 350°F preheated oven to 25-30 minutes. Check with toothpick. Let them cool.
Mix the Philadelphia cream cheese with the sugar and the vanilla extract when it's fluffy and creamy.
Put the whipping cream into the stand mixer and beat with 1 teaspoon vanilla extract. When it's ready add the cheesy cream and mix together well. Put into the fridge until use.
I put aside some raspberry to the decor and press the remain fruits.
I cut a wedge shape in the muffins and fill with the strawberry puree. I put back the top of the wedge shape. Put the cream in a star tip end whipping cream bag and create the top of the small cake. Decor with fresh fruit!

Creamy - Cheesy Chicken Breast with Rice ( for 8 person )


Preparation: 20 minutes
Cook: 2,5 hours

Ingredients:

3 chicken breast fillet
Salt, Black Pepper, Ground Nutmeg
3 eggs
2 cup heavy cream
2 tablespoon flour
4 cup shredded mozzarella cheese
8 cup steamed rice


Sprinkle the bottom of the pan with cheese.
Rolled the salty and peppery chicken slices into flour and put to one layer in the pan.
Mix the cream and the eggs.
Pour the half of the mixture into the chicken.
Sprinkle with cheese.
Do this process one time again and sprinkle gently the top with nutmeg and put some butter pieces.
Cover with aluminium foil and put in the oven to 380 °F and cook to 2 hours.
After the 2 hours take off the foil.
I put some more cheese (it's optional) and fry more 20-30 minutes.
This is the final looking, the cheese turns golden brown! :)

Spicy Pork with Veggies

This is the easiest and quickest meal for me. I just cut the ingredients and fry in a pan. You can change the meat the veggies, the spices,  you could prepare it as hot or sweet. Your choice! :)

Preparation: 15 minutes
Cook: 20 minutes

Ingredients:

300 g pork
1 zucchini
1 bell pepper
Grill spices
Garlic cream
Black Pepper





I preheat the pan and fry the pork in the highest vol.
Put the veggies.
Sprinkle with the spices and add the garlic cream.
I served with some tomato.

Pizza Roll with Parmesan Dip - Easy and Fast

Ingredients:

1 roll original pizza crust
1 cup sliced pork ham
1 cup sweet corn
2 tablespoon sour cream
2 cup shredded mozzarella cheese
salt, black pepper, garlic cream

Dip:

3 tablespoon sour cream
1 tablespoon mayo
1 tablespoon Parmesan 
1 tablespoon parsley
2 pinch of salt



1.) Preheat the oven to 400°F.
2.) Cover the pan with parchment paper.
3.) Roll in the pizza crust.
4.) Spread the sour cream to the crust and sprinkle with the salt, pepper and garlic powder.
5.) Put the ham, the sweet corn and the cheese.
6.) Roll up the crust and cut in 1 inch wide slices.
7.) Put them into the oven to 30-40 minutes until turn golden brown.
8.) Mix the dip: put every ingredients in a bowl and mix well.
9.) Serve with the Parmesan dip when they are hot!

Blueberry Crumb Muffins

Every time when I go to Sam's Club I see all of the cakes and cookies and. They looks amazing, the smell is wonderful every time. We aren't big muffin fans but when I find a fruity or chocolaty one I try it. I like this recipe, easy and very delicious!
Now the steps! :)

Ingredients:

2 cup all-purpose flour
2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter - room temperature
1 cup granulated sugar (when you like sweeter put 1 1/2 cup)
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
2 1/2 cup blueberries

Crumb Topping:

6 tablespoon unsalted butter - room temperature
1/4 cup granulated sugar
1/4 cup packed brown sugar
1/4 cup all-purpose flour
1/4 teaspoon ground cinnamon

Preheat the oven to 375°F and put the muffin papers to the pan.
Mix the flour, the baking powder and the salt in a medium bowl.
Mix the sugar and the butter in a mixing bowl when it's fluffy.
Add the eggs, one at time!
Pour the milk.
Add the vanilla.
And finally add the dry ingredients and mix well. It"s a very thick muffin dough.
Mix the blueberries very gently to the dough, don't break!
Fill the cups 2/3 full.
Mix the crumb ingredients with a fork.
Add one spoon crumb every muffin.
Bake it for 30 minutes.
Check with a needle that is baked in the middle
